Week 21 (Part 3): My Husband’s a Jerk Chicken Potpie

We’re up to the first main course of the pie party: My Husband’s a Jerk Chicken Potpie! Y’all, this book has some GOOD savory pies. I don’t like chicken, but as I began making the pie, even I got excited about tasting it.

This pie is symbolic of Jenna’s yearning for a swift escape from her husband and a better life for herself and her unborn child. Now that it’s 2018, let’s take it from Jenna and move on to bigger and better things. Happy new year, everyone!

What’s Inside: Chicken, jerk seasoning, onion, sweet potato, green peas, rice

“Pro” tips:

1) I found this dough to be a bit difficult to work with. If you stick to the recipe, keep the dough refrigerated for as long as possible before rolling out. Otherwise, consider cutting a small amount of butter from the recipe.

2) If you’re like me and get worried about undercooking chicken, you can certainly cook it longer on the stove than the recipe calls for. The thighs I purchased were a little misshapen, so they required a lot more finagling. Just make sure you don’t see any pink and the rest will cook in the oven.

3) I flat-out forgot to put the parsley into the pie. I didn’t really miss it.

4) When rolling out the dough, be sure not to roll it too thin or the filling below will poke through. I had that issue, but luckily was able to cover it up with decoration and well-placed ventilation.

What Baking Can Do:

As you could probably tell from my opening statement, this pie was a huge hit! It was also a ton of fun to decorate. I initially giggled at my sad attempt at a broken heart, but it looks pretty damn close to the picture in the cookbook if I do say so myself. Highly recommend!
